Method

Step 1 of 3

Cook risoni following packet instructions. Drain and rinse.

Meanwhile, heat oil in a saucepan over medium heat. Add garlic and onion and cook, stirring frequently, for 3 minutes or until onion has softened. Stir in flour and cook for 1 minute. Gradually whisk in milk. Continue to whisk for 5 minutes or until sauce has thickened.

Step 3 of 3

Add spinach and cook for 3 minutes or until wilted. Stir in risoni and parmesan. Season with salt and pepper. Serve immediately.
