- 400grams garlic marinated prawns
- 1/4 cup extra virgin olive oil
- 1 lemon, juiced
- 1 cup wholemeal couscous
- 1teaspoons smoked paprika
- 200grams green beans, trimmed, cut into thirds diagonally
- 250grams cherry tomatoes, halved
- 1 large red onion, thinly sliced
- 1/2 cup small continental parsley leaves
Description
Have dinner ready in a flash with this quick and easy garlic prawns and couscous salad recipe.
Method
Step 1 of 5
Combine prawns and half each of the oil and lemon juice in a bowl, then set aside.
Step 2 of 5
Place couscous and paprika in a large heatproof bowl. Add 1 cup boiling water, then cover and stand for 5 minutes. Stir with a fork to separate couscous, then season.
Step 3 of 5
Place beans in a separate heatproof bowl and cover with boiling water. Stand, covered, for 5 minutes or until tender. Drain and refresh under cold water. Add beans and tomato to couscous bowl.
Step 4 of 5
Heat half the remaining oil in a large frying pan over high heat. Cook onion, stirring, for 7 minutes or until light golden. Add onion, parsley and remaining lemon juice to couscous. Season and stir to combine.
Step 5 of 5
Heat remaining oil in same pan over high heat. Drain prawns and cook, turning occasionally, for 3 minutes or until prawns change colour and are cooked through. Serve couscous salad topped with prawns.
