  • 1 brown onion, finely chopped
  • 1 red capsicum, finely chopped
  • 2 cloves garlic
  • 500grams beef mince
  • 2teaspoons Mexican spice mix
  • 400grams no-added-salt diced tomatoes
  • 400grams black beans
  • 6 slices La Famiglia Garlic Bread
  • 1/2 cup shredded smokey chipotle cheddar & tasty cheese blend
  • 1/2 bunch coriander, leaves picked

Method

Step 1 of 3

Heat oil in a 28cm round (top measurement) oven-proof sauté pan over medium heat. Cook onion, capsicum and garlic for 5 minutes, stirring, or until softened. Add beef. Cook for 5 minutes, breaking up lumps with a wooden spoon, or until browned.

Step 2 of 3

Preheat grill to medium heat. Meanwhile, add spice mix to beef mixture. Cook, stirring for 1 minute or until fragrant. Add tomatoes and beans and stir to combine. Cook, stirring, for 10 minutes or until mixture has thickened.

Step 3 of 3

Top mixture with bread slices, buttered-side up. Arrange cheese on top. Place pan on centre shelf and grill for 3 minutes or until bread is golden and cheese has melted. Stand for 5 minutes, then serve sprinkled with coriander.
