  • 100grams green prawn meat, chopped
  • 2tablespoons fish sauce
  • 1/3 cup white sugar
  • 500grams white fish, roughly chopped
  • 1/4 cup white vinegar
  • 100grams green beans, trimmed, chopped
  • 1 long red chilli, deseeded, chopped
  • 1tablespoons coriander leaves, chopped
  • 1/2 Lebanese cucumber, deseeded, finely chopped
  • 3 kaffir lime leaves, spine removed, finely shredded
  • 2tablespoons red curry paste
  • 1L vegetable oil (for frying)

Method

Step 1 of 3

Grease and line a tray. Place fish, curry paste and fish sauce in a food processor. Process until finely chopped. Transfer to a bowl with prawn meat, beans, lime leaves and coriander. Stir to combine.

Step 2 of 3

Heat oil in a frying pan over medium heat. Drop spoonfuls of mixture into pan and flatten. Cook, in batches, turning, for 5 minutes or until golden and cooked through.

Step 3 of 3

To make sauce, stir vinegar and sugar together in a bowl until sugar dissolves. Add cucumber, chilli and fish sauce. Stir to combine. Serve fish cakes with dipping sauce and coriander.
