  • 3 cloves garlic, crushed
  • 1tablespoons fennel seeds
  • 1 lemon, finely grated zest
  • 1/2 orange, finely grated zest
  • 1.50kilograms boneless pork belly, skin scored
  • 1teaspoons salt
  • 1teaspoons black pepper

Method

Step 1 of 3

Mix together the garlic, fennel seeds, and lemon and orange zest in a bowl to make a paste. Rub all over the pork, pressing it into the cuts in the skin. Season well.

Step 2 of 3

Place the meat in a roasting pan. Roast in a preheated oven, at 220°C, for 20 minutes. Reduce the oven temperature to 175°C, and cook for another 1 hour, until the meat is crisp and cooked through.

Step 3 of 3

Cut the meat into small bite-size pieces and serve.
