- 3tablespoons sunflower oil
- 750grams pork belly, cut into bite-size pieces
- 10 curry leaves
- 1tablespoons cumin seeds
- 1tablespoons coriander seeds, crushed
- 1 onion, finely chopped
- 2teaspoons garlic, finely grated
- 2teaspoons fresh ginger root, finely grated
- 2tablespoons curry powder
- 2tablespoons wine vinegar
- 2 cinnamon sticks
- 2 star anise
- 6 green cardamom pods, bruised
- 1 2/3 cups coconut milk
- 3/4 cup water
- 1 pinch salt
- 1 pinch pepper
Method
Step 1 of 4
Heat half the oil in a heavy skillet and add the pork. Stir-fry for 4-5 minutes until browned, remove with a slotted spoon and set aside.
Step 2 of 4
Add the remaining oil to the pan and add the curry leaves, cumin, coriander, onion, garlic, and ginger. Stir-fry for 3-4 minutes, then return the pork to the pan with the curry powder. Stir-fry for 2-3 minutes more.

Stir in the vinegar, cinnamon, star anise, cardamom, and coconut milk and measured water. Season and bring to a boil.
Step 4 of 4
Cover tightly and cook in a preheated oven at 140°C for 2½ hours or until the pork is tender. Serve with crusty bread or rice.
