Description
The classic Eton mess gets a makeover with these fluffy pancakes topped with delicious meringue and berries. Make this easy pancake recipe as a fun brekkie.
Method
Step 1 of 4
Make pancake batter according to shaker instructions.
Step 2 of 4
Heat a large frying pan over medium heat. Grease with a little melted butter. Spoon 1/3 cup batter into pan, spreading to form a 12cm round. Repeat to make another pancake. Cook for 3 minutes or until bubbles form on top. Flip and cook for 1 minute or until golden and cooked through. Transfer to a plate and keep warm. Repeat with remaining batter to make a total of 8 pancakes, greasing pan with a little butter, if necessary.

Meanwhile, using an electric mixer, beat cream, sugar and vanilla until soft peaks form.
Step 4 of 4
Create 4 pancake stacks, layering with whipped cream and topping with strawberries and meringues.
