10 Ingredients

  • 3 large eggplants, sliced into discs
  • 1tablespoons olive oil
  • 1 large onion, peeled and diced
  • 2 cloves garlic, peeled and minced
  • 1teaspoons oregano
  • 400grams chopped tomatoes, canned
  • 1 pinch chilli flakes
  • 2 balls mozzarella, reduced fat
  • 1 pinch salt
  • 2tablespoons basil, fresh, chopped

Description

These eggplant bakes are a lighter take on pizza with all the flavours we crave.
Instruction tip
Add your favourite pizza toppings like pepperoni and chopped peppers or ham and pineapple.

Method

Step 1 of 4

Pre-heat the oven to 180°C/160°C fan-forced. Place the eggplant disks on baking sheets and brush on each side with oil. Bake for 20 minutes, flipping halfway through.

Step 2 of 4

In a saucepan on a medium heat, fry the onion in a little oil for 3-4 minutes until soft. Add the garlic, oregano and chilli flakes, cook for another minute and pour in the chopped tomatoes. Simmer for 10 minutes or until slightly reduced.

Step 3 of 4

Remove the eggplants from the oven and top each slice with a spoonful of tomato sauce. Top with torn mozzarella and basil leaves.

Step 4 of 4

Return to the oven for 5 minutes or until the mozzarella is melted and bubbling and serve.
