- 6 medium potatoes, peeled and chopped
- 425grams can tuna, drained
- 3 spring onions, thinly sliced (tops as well, reserve a tablespoon)
- 3/4 cup panko bread crumbs
- 1 egg, lightly beaten
- 1/2 cup cheese (optional)

Description
Great for those hot summer nights with salad and chips.
Method
Step 1 of 6
Boil potatoes. Once cooked, drain and mash, transfer to a large bowl. Allow to cool slightly.
Step 2 of 6
Add tuna, spring onion,cheese and egg to mash. Season with salt and pepper.
Step 3 of 6
Place breadcrumb mix in a bowl (and extra spring onion tops if desired) in a bowl.
Step 4 of 6
Shape mixture into patties (I use a 1/4 cup) and coat.
Step 5 of 6
At this stage they can be frozen.
Step 6 of 6
Gently fry until golden brown. Serve with salad and chips.
