  • 180grams butter, at room temperature
  • 1 1/4 cups caster sugar
  • 3teaspoons Heilala Vanilla Extract
  • 3 eggs, at room temperature
  • 2 cups self-raising flour
  • 1 cup milk
  • 200grams butter, softened slightly
  • 3 cups icing sugar mixture, sifted
  • 1tablespoons milk
  • 1 1/2tablespoons Heilala Vanilla Bean Paste

Method

Step 1 of 5

Preheat oven to 180°C/160°C fan-forced. Grease and line a 23cm square cake pan with baking paper, extending paper 5cm above rim of pan.

Using an electric mixer, beat butter and sugar in a large bowl until pale. Add the vanilla extract. Beat to combine. Add eggs, one at a time, beating well between each addition.

Add half the flour and half the milk. Beat until combined. Add remaining flour and milk. Beat until combined. Spoon into prepared pan. Smooth surface. Bake for 50 minutes or until a skewer inserted into the centre comes out clean. Stand in pan for 5 minutes, then transfer to a wire rack to cool completely.

Meanwhile, to make the vanilla bean butter cream, using an electric mixer, beat butter in a large bowl until very pale. Gradually add sugar, beating between each addition until pale and fluffy. Beat in milk and vanilla bean paste.

Place cake on a serving plate or cake stand. Spread top and sides of cooled cake with icing to cover. Serve.
