  • 1tablespoons pure icing sugar
  • 1/4 cup sour cream
  • 1 lemon, juiced and rind finely grated
  • 1 egg
  • 1/4 cup caster sugar
  • 150grams sweet flan

Method

Step 1 of 4

Preheat oven to 180°C. Whisk egg, sugar, sour cream and cornflour until thick and well combined. Stir in lemon rind and juice.

Step 2 of 4

Place flan case onto a baking tray. Carefully pour lemon mixture into the base. Bake tart for 20 minutes or until filling has set. Chill tart in the fridge until it's completely cold.

Step 3 of 4

To serve, preheat grill on high. Sprinkle icing sugar over cold lemon tart. Place under the grill and cook for 1-2 minutes or until the top caramelises.

Step 4 of 4

Serve immediately.
