- 4 basa fillets (or salmon fillets x 140g each)
- 2 spring onion, thinly sliced (to serve)
- 2 red chillies, sliced (optional)
- 1/3 cup coriander (to serve)
- 250grams snow peas, trimmed
- 4 kaffir lime leaves
- 1tablespoons fish sauce
- 1 lime, zested, juiced
- 3 cup long grain white rice, steamed (to serve)
- 400milliliter coconut milk
- 1 garlic clove, crushed
- 1tablespoons brown sugar
Description

Method
Step 1 of 3
Combine coconut milk, kaffir leaves, lime zest and juice, fish sauce, sugar, chilli and garlic in a large frying pan or wok over medium-high heat and bring to the boil.
Step 2 of 3
Add fish and reduce heat to low. Cover and simmer gently for 8-10 minutes, depending on thickness of fish (it should flake easily when tested with a fork).
Step 3 of 3
Add snow peas to poaching liquid and simmer for 2 minutes. Serve fish and snow peas on a bed of rice. Spoon over some of the liquid and top with spring onion and coriander.
