  • 1 small yellow onion, peeled, diced small
  • 2 cloves garlic, peeled, minced
  • 1teaspoons pumpkin spice
  • 1kilograms pumpkin
  • 4 cups chicken stock
  • 1teaspoons thyme, chopped
  • 1/2 cup heavy cream
  • 1 pinch salt (to taste)
  • 1 pinch pepper (to taste)

Description

A one pot, easy recipe using a variety of your favourites to create a rich and creamy soup packed with flavour.

Method

Step 1 of 4

Add the oil to a pot setting it to medium-heat on the stovetop to heat up for 1 minute. Add the onions to sweat for 2 minutes before adding in the garlic cooking 30 seconds.

Step 2 of 4

Stir in the pumpkin spice, pumpkin, chicken stock and thyme. Once the soup starts to boil reduce the heat and simmer for 15 minutes.

Step 3 of 4

Remove the soup from the heat, stir in the heavy cream. Let it cool for a few minutes before adding it to a blender, blending the soup until smooth.

Step 4 of 4

Season with salt and pepper before placing into warm bowls.
