- 3 1/4 cups chicken stock, hot, made with 1 stock cube
- 2/3 cup milk
- 2tablespoons cream
- 2tablespoons chives (to serve)

Description
Potato soup is classically Irish, filling, comforting and so easy to make.
Method
Step 1 of 3
Heat the butter in a large, deep pan on medium low heat and cook the onions and potatoes for 10 minutes until softened, stirring occasionally.
Step 2 of 3
Pour in the stock, bring to the boil, reduce the heat and simmer, covered for 15 minutes. Add the milk, remove from the heat and blend with an immersion blender until smooth.
Step 3 of 3
Serve with a swirl of cream and fresh chives on top.
