- 1 1/2 cup stuffing mix
- 150grams craisins dried cranberries
- 2 small onions, finely chopped
- 1 cup parsley, chopped
- 1tablespoons oil
- 5milliliter extra virgin olive oil spray
- 2 eggs
- 500grams chicken mince

Step 1 of 3
Preheat oven to 180°C. Soak dried cranberries in boiling water for 15 minutes.
Step 2 of 3
Meanwhile, heat oil in a frying pan and cook onions until soft and golden. Transfer to a large bowl and add mince, stuffing mix, parsley and eggs. Drain cranberries, add to bowl and mix together well. With damp hands roll into golf ball sized balls.
Step 3 of 3
Add to baking pan, spray with oil spray and cook for 30 minutes until golden.
