Guacamole
  • 2 avocados, halved, deseeded
  • 1/2 small red onion, finely chopped
  • 1 lime, juiced
  • 1 Woolworths BBQ roast chicken, skin and bones removed and discarded, meat shredded
  • 300grams can four bean mix, rinsed, drained
  • 250grams block cream cheese, softened
  • 1/4 bunch coriander, leaves and stems finely chopped (plus extra leaves to serve)
  • 1/4 cup chipotle in adobo sauce
  • 2 250g pkt mini tortillas
  • 5milliliter olive oil cooking spray
  • Greek-style yoghurt (to serve)
  • shredded iceberg lettuce (to serve)

Description

This chicken recipe is perfect for entertaining. Spicy chicken, beans, guacamole, yoghurt and coriander are rolled up in mini flour tortillas to make tasty taquitos.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Line 2 baking trays with baking paper. Combine chicken, beans, cream cheese, coriander and sauce in a bowl. Season.

Step 2 of 4

Place half the tortillas on a clean bench. Place 1/4 cup chicken mixture across the length of each tortilla, in the centre. Roll tortillas to enclose filling. Place, seam-sides down, on trays. Spray with oil. Repeat with remaining tortillas and chicken mixture. Bake for 15 minutes or until golden and crisp.

Meanwhile, to make the guacamole, scoop avocado flesh into a bowl. Using a fork, mash until smooth. Add onion and lime juice, and season. Stir to combine.

Step 4 of 4

Top taquitos with guacamole, yoghurt, lettuce and extra coriander. Season and serve.
