Chicken & Prawn Paella

- 1 chorizo, sliced
- 4 chicken thigh fillets, cut into 4cm pieces
- 1 red capsicum, diced
- 1/3 cup continental parsley, leaves roughly chopped
- 4 green shallots, thinly sliced
- 400grams diced Italian tomotoes no added salt
- 1teaspoons smoked paprika
- 500grams ready- cooked microwave basmati rice
- 650grams green prawn cutlets
- 2tablespoons olive oil
- 1teaspoons saffron threads (optional)
Method
Step 1 of 5
Combine saffron and 1 tablespoon of hot water in a small bowl. Stand for 5 minutes. Cook rice in microwave following packet instructions.
Step 2 of 5
Heat 2 tablespoons of oil in a large deep frying pan over medium heat. Add prawns and cook for 2-3 mins or until just turning white. Transfer to a large plate.
Step 3 of 5
Cook chorizo for 2-3 minutes or until golden. Transfer to plate. Cook chicken pieces for 4 minutes or until golden and transfer to plate with prawns.
Step 4 of 5
Heat remaining oil in a pan and add capsicum. Cook for 3 minutes or until tender. Add shallots and paprika.
Step 5 of 5
Cook for 1 minute. Return prawns, chorizo and chicken to pan. Stir in rice, tomatoes, saffron mixture and 3/4 cup of water. Cook for 2 minutes or until heated through. Sprinkle with parsley and serve.
