- 100grams cheddar, coarsely grated
- 100grams roasted beetroot hummus
- 2 Qukes baby cucumbers, finely chopped
- 1/4 bunch dill, leaves picked
Description
This simple yet fancy starter is a great way to impress your guests. Baked cheddar cups are balanced perfectly with vibrant beetroot hummus.
Method
Step 1 of 3
Preheat oven to 170°C/150°C fan-forced. Line 2 large baking trays with baking paper. Trace 6 x 7cm circles, 4cm apart, onto each sheet of baking paper, then place marked-sides down.

Spoon 1 heaped tablespoonful cheddar on each circle to cover, then lightly press to compact. Bake 1 tray for 12 minutes or until golden. Remove tray from oven and stand for 30 seconds, then quickly and carefully lift each cheese disc with a butter knife and place on top of an upturned 24-hole, 1 1/2 tbs-capacity mini muffin pan. Press sides down to create a cup shape. Repeat with remaining tray. Set cups aside for 30 minutes to cool completely.

Remove cups from pan and turn over. Fill each with hummus, then top with cucumber and dill. Season with pepper and serve immediately.
