- 1/4 cup dried apricots
- 24 grissini sticks, plus extra to serve
- 1/4 pear, sliced
- 3tablespoons honey, to drizzle
- 3 triple cream brie
- 50grams quince paste
- 1/2 cup walnuts
- 5 slices prosciutto, rolled

Method
Step 1 of 3
Place one brie wheel on a serving plate and top with pear slices and dried apricots.
Step 2 of 3
Spread second brie wheel with quince paste and top with walnuts. Place on top of the first brie.
Step 3 of 3
Place remaining brie wheel on top. Top with slices of prosciutto rolled to resemble roses and garnish with grissini sticks. Drizzle assembled brie cake with honey and serve with extra fruit, grissini sticks and drizzled honey.
