For the meringue nests
  • 2 egg, whites only needed
  • 1/2teaspoons cornstarch
  • 1/2teaspoons cream of tartar
  • 100grams caster sugar
  • 1 pinch salt
  • 60grams caramel
  • 60grams praline
  • 1/4 cup whipped cream, whipped

Description

These crunchy desserts have an indulgent, sticky and nutty centre.

Method

Step 1 of 9

Pre-heat the oven to 90°C.

Step 2 of 9

Beat the egg whites until stiff peaks appear.

Step 3 of 9

While mixing, add the cream of tartar, salt and cornstarch and keep mixing to keep the peaks.

Step 4 of 9

Incrementally add the sugar always beating to keep the stiff peaks.

Transfer to a piping bag and dollop about make 6 circular nests with a gap in the centre of each.

Bake in the oven for 60 minutes until lightly browned and hard.

While they are baking you can combine the caramel and praline in a bowl.

Whip the cream until fluffy.

Step 9 of 9

Remove nests from the oven and allow to cool fully before serving with the whipped cream and praline mix in the centre of the nests.
