  • 2 corn cobs, silks and husks discarded, kernels removed
  • 1 bunch coriander, leaves picked
  • 2tablespoons Woolworths extra virgin olive oil
  • 1 red onion, finely chopped
  • 35grams Woolworths taco seasoning
  • 840grams no-added-salt black beans, rinsed, drained
  • 6 small radishes, trimmed, cut into thin wedges
  • 2 lime, juiced (save 1 lime, halved, to serve)
  • 8 mini flour tortillas, warmed
  • 1 avocado, halved, deseeded, thinly sliced

Description

Make tonight taco night with our easy vegetarian taco recipe. This simple recipe with black beans, juicy corn and creamy avocado really delivers on flavour.

Tip:
Instead of discarding coriander roots, wash them well, then finely chop and add them to the pan with the onion.

Method

Step 1 of 3

Heat a large frying pan over high heat. Cook corn, stirring occasionally, for 5 minutes or until charred and tender. Transfer to a medium bowl. Set aside to cool.

Step 2 of 3

Meanwhile, finely chop three-quarters of the coriander leaves. Heat half the oil in same pan over medium-high heat. Cook onion, stirring, for 3 minutes or until softened. Add seasoning and cook, stirring, for 1 minute or until fragrant. Add beans and cup water, then bring to the boil. Reduce heat to medium and simmer, uncovered, for 2 minutes or until beans are heated through and sauce has thickened. Stir in half the chopped coriander. Season with pepper. Top with remaining coriander leaves.

Step 3 of 3

Add radish, lime juice, and remaining chopped coriander and oil to corn, then stir to combine. Season with pepper. Top tortillas with bean mixture, corn salsa and avocado. Season with pepper and serve.
