  • 1 cup plain flour
  • 200grams dark chocolate, roughly chopped
  • 1teaspoons bicarbonate of soda
  • 1 cup rolled oats
  • 1 free range egg
  • 1 pinch sea salt flakes (to sprinkle)
  • 1/3 cup caster sugar

Description

If you like your cookies soft, chewy and full of chocolate, try this oat chocolate chip cookies recipe. It’ll only take you 20 minutes.

Method

Step 1 of 6

Preheat oven to 200°C/180°C fan-forced. Line 2 large baking trays with baking paper.

Step 2 of 6

Cream butter using an electric mixer fitted with a paddle attachment on medium speed for 3 minutes or until light, pale and fluffy, scraping down sides of bowl halfway through.

Step 3 of 6

Add sugars and mix for 1 minute on medium speed or until well combined, scraping down the sides of bowl as necessary.

Step 4 of 6

Add egg and vanilla and mix for 1 minute on medium speed or until incorporated. Add flour, oats, bicarbonate of soda and a pinch of salt and mix on low speed for 20 seconds or until just combined. Add chocolate and mix on low speed for a further 10 seconds.

Step 5 of 6

Cover dough and refrigerate for 15 minutes or until slightly chilled. Roll ¼ cup of dough into a ball using clean hands. Repeating to make a total of 10 dough balls. Place dough balls on trays, spacing well apart to allow for spreading. Slightly flatten dough balls, then bake for 9 minutes.

Sprinkle sea salt over cookies, then allow to cool completely on trays before serving.
