  • 1teaspoons ginger, grated
  • 1 small corella pear, cored, chopped
  • 2/3 cup natural Greek yoghurt
  • 1tablespoons apple cider vinegar
  • 1 cup strawberries, hulled (extra to serve)
  • 125grams cooked beetroot
  • 1tablespoons goji berries (to serve)

Method

Step 1 of 3

Process beetroot, strawberries, pear flesh and ginger in a blender until smooth.

Step 2 of 3

Add vinegar and 1/2 the yoghurt and blend quickly to combine.

Step 3 of 3

Pour into jars and top with remaining yoghurt, extra strawberries and goji berries, to serve.
