- 1teaspoons ginger, grated
- 1 small corella pear, cored, chopped
- 2/3 cup natural Greek yoghurt
- 1tablespoons apple cider vinegar
- 1 cup strawberries, hulled (extra to serve)
- 125grams cooked beetroot
- 1tablespoons goji berries (to serve)
Method
Step 1 of 3
Process beetroot, strawberries, pear flesh and ginger in a blender until smooth.
Step 2 of 3
Add vinegar and 1/2 the yoghurt and blend quickly to combine.
Step 3 of 3
Pour into jars and top with remaining yoghurt, extra strawberries and goji berries, to serve.
