Smoothie Avocado Boat

- 2 bananas, peeled
- 1/2 bunch mint, leaves picked (plus extra sprigs to serve)
- 1 avocado
- 1 lime juiced
- 2 cup baby spinach
- 1/2 cup coconut water
- 1/4 cup coconut flakes, toasted (to serve)
- 1tablespoons pepita seeds (to serve)
- 2teaspoons honey
Method
Step 1 of 3
Cut avocado in half lengthways and remove seed. Scoop out flesh using a large spoon, reserving skins. Slice half of the flesh and set aside.
Step 2 of 3
Place remaining avocado, 1 of the bananas, spinach, mint, lime juice, coconut water and honey in a blender and blitz until smooth.
Step 3 of 3
Pour into reserved avocado skins. Top with coconut, pepita seeds, reserved sliced avocado, reserved sliced banana and extra mint sprigs. Serve.
