- 2/3 cup milk
- 750grams white washed potatoes (chopped)
- 1/2 cup finely grated parmesan
- 1tablespoons olive oil
- 1/2 cup panko breadcrumbs
- 1/2 cup dried red lentils
- 3 carrots (finely diced)
- 2 celery stalks (finely diced)
- 1 brown onion (diced)
- 2 cup salt-reduced beef stock
- 2tablespoons worcestershire sauce
- 1tablespoons thyme leaves
- 2tablespoons tomato paste
- 500grams beef mince
- 1tablespoons olive oil

Description
Lentils help stretch the mince further without compromising flavour in this hearty, budget-friendly cottage pie recipe.
Method
Step 1 of 5
Heat oil in a frying pan over medium-high heat. Add onion, carrot and celery. Cook for 3 minutes or until onion softens. Add mince and cook for 10 minutes, breaking up lumps with the back of a wooden spoon, or until evenly browned.
Step 2 of 5
Stir in paste and cook for 1 minute. Add stock, lentils, Worcestershire sauce and half the thyme. Bring to the boil. Simmer for 20 minutes or until lentils soften and sauce thickens.

Meanwhile, to make the topping, place potato in a medium saucepan and cover with cold water. Bring to the boil over high heat. Boil for 15 minutes or until tender. Drain and return to pan off the heat. Add milk, season and mash until smooth. In a bowl, mix breadcrumbs with parmesan and remaining thyme and oil, set aside.
Step 4 of 5
Preheat oven grill on high. Spoon mince mixture into into 6 x 1-cup capacity ovenproof dishes. Top each evenly with mash, spreading with the back of a spoon. Sprinkle crumb mixture evenly over the top of mash.
Step 5 of 5
Cook under grill on middle oven shelf for 6 minutes or until crumb topping is toasted and golden. Serve.
