  • 1/2 cup walnuts, toasted
  • 1 clove garlic

Description

Mint, broccolini and broad beans are the stars of this super green pesto. Have it as a dip, smear it on sandwiches or even savoury breakfasts. Try it today.

Method

Step 1 of 2

Place beans and broccolini in a large heatproof bowl. Cover with boiling water and set aside for 2 minutes. Refresh in cold water and drain well.

Step 2 of 2

Transfer to a food processor. Add mint, parmesan, walnuts, garlic, zest and lemon juice. Process to a rough paste. Add oil and process to combine. Season to taste. Transfer to a jar and cover in a thin layer of extra oil. Seal jar and refrigerate until ready to use.
