Baked Jam Roll

9 Ingredients
- 200grams all-purpose flour
- 1 1/2teaspoons baking powder
- 1/4teaspoons salt
- 8tablespoons cold butter, shredded on a box grater
- 1/2 cup whole milk
- 104grams jam, any flavor
- 1 large egg, beaten
- 1/2teaspoons sugar, for sprinkling
- 1teaspoons creme anglaise cream, warm (to serve)
Method
Step 1 of 4
Preheat the oven to 200°C. Line a baking sheet with wax paper.
Step 2 of 4
Sift the flour, baking powder, and salt into a bowl. Mix in the butter. Stir in the milk to make a stiff dough. Roll on a lightly floured work surface into a 25cm - 18cm rectangle.
Step 3 of 4
Spread the dough with the jam. Starting from a long side, roll into a log. Lift and transfer the roll to the baking sheet, seam side down. Lightly brush with the beaten egg and sprinkle with the sugar.
Step 4 of 4
Bake for about 25 minutes, or until golden brown and crisp. Serve with the custard sauce.
