Australian Prawn & Chorizo Paella

- 12 large green prawns
- 1 onion, finely chopped
- 2 cup parsley leaves
- 1 pinch sea salt
- 1 pinch cracked black pepper
- 2teaspoons smoked paprika
- 1tablespoons red wine vinegar
- 1 lemon, peeled & segments removed
- 4 1/2 cup chicken stock
- 2 air dried chorizo, sliced
- 1/4 cup garlic aioli (to serve)
- 2 cup paella rice
- 2tablespoons olive oil
- 4 clove garlic, crushed
- 1 pinch saffron threads
Method
Step 1 of 12
Heat oil in a large deep frying pan over a high heat.
Step 2 of 12
Add the onion, garlic & chorizo & cook for 2-3 minutes or until lightly golden.
Step 3 of 12
Add the paprika & saffron & cook stirring for a further minute.
Step 4 of 12
Add 4 cups of stock, stir & bring to the boil.

Add the rice & stir to even the mixture.
Step 6 of 12
Peel & de-vein prawns leaving tails intact.
Step 7 of 12
Push the prawns into the mixture, reduce the temperature to low & cook, without stirring for 15 minutes.
Step 8 of 12
Increase the temperature to medium & cook the paella for a further 4-5 minutes, adding the extra stock gradually if necessary, or until the rice is al dente.
Step 9 of 12
Season with salt & pepper & remove from the heat.
Step 10 of 12
Cover surface with a clean towel & allow to rest for 10-15 minutes or until the liquid is absorbed & the prawns are cooked through.

Place the parsley, lemon segments, olive oil & red wine vinegar into a bowl & toss to combine.

Serve paella topped with parsley salad & aioli.
