  • 2 cup long grain rice
  • 1 chorizo sausage, sliced
  • 1/2 cup frozen peas
  • 1 red capsicum, seeded and sliced
  • 1 onion, chopped
  • 400grams diced tomatoes
  • 1teaspoons smoked paprika
  • 1 lemon, cut in wedges (to serve)
  • 1/2 cup chicken stock
  • 1 pinch pepper (for seasoning)
  • 300grams marinara mix
  • 1tablespoons olive oil
  • 2 clove garlic, crushed
  • 1 pinch saffron
  • 1 pinch sea salt ground (to taste)

Method

Step 1 of 4

Heat oil in frying pan over medium heat. Add chorizo, onion and garlic and cook for 2 minutes. Add capsicum, rice, paprika and saffron and cook for 1 minute. Pour in stock and tomatoes, season with salt and pepper and stir well. Bring to the boil, reduce heat to a low simmer, cover and cook for 15 minutes.

Uncover and stir in marinara mix and peas. Cook, covered, for a further 10 minutes until marinara is cooked.

Step 3 of 4

Remove from heat and stand for 5 minutes before serving.

Step 4 of 4

Serve with a wedge of lemon.
