  • 1 clove garlic, crushed
  • 20grams butter
  • 2tablespoons lemon juice
  • 1tablespoons continental parsley, chopped
  • 1 lemon, rind finely grated
  • 2 leeks
  • 1 1/2 cup fish or chicken stock
  • 1/2 cup white wine
  • 400grams seafood marinara
  • 2 cup arborio Rice
  • 1tablespoons olive oil

Method

Step 1 of 8

Heat butter and oil in a pressure cooker over high heat.

Step 2 of 8

Add seafood and cook for 1-2 minutes until prawns have just changed colour. Transfer to a bowl with a slotted spoon. Cover and set aside.

Step 3 of 8

Add leek and garlic to pan. Cook for 5 minutes until softened.

Step 4 of 8

Add rice and stir for 2 minutes. Add wine and stock, secure and lock lid.

Step 5 of 8

Set to 2/HIGH pressure. When pressure indicator rises and steam escapes steadily, lower heat and cook for 10 minutes.

Step 6 of 8

Remove from heat and when pressure indicator has returned to original position, turn valve to steam release position. Once remaining steam has been released open the cooker.

Step 7 of 8

Stir in the seafood, parsley, lemon rind and lemon juice.

Step 8 of 8

Return to low heat for 5 minutes. Spoon into bowls and serve.
