- 1 pineapple, halved
- 1/4 bunch mint, leaves picked
- 1/2 cup light Greek-style natural yoghurt
- 125grams blueberries
Description
Bring joy to your family night with this vibrant, flavourful fruit and yoghurt bowl inspired by the delightful Inside Out character.
Method
Step 1 of 3
Using a melon baller, cut balls from pineapple halves. Peel and roughly chop any remaining pineapple flesh. Place in a serving bowl. Arrange balls over the top.
Step 2 of 3
Reserve a few mint leaves for serving. Finely chop remaining mint leaves. Combine yoghurt and mint in a small bowl.
Step 3 of 3
Arrange blueberries over the pineapple, keeping half of the pineapple balls exposed. Dollop with some mint yoghurt. Sprinkle with reserved mint. Serve with remaining mint yoghurt.
