- 10 Madura Earl Grey Tea Bags
- 1tablespoons poppy seeds
- 1/3 cup milk
- 250grams unsalted butter
- 2/3 cup honey
- 2 eggs, lightly beaten
- 150grams almond meal
- 1 1/3 cups self-raising flour
- 1 1/3 cups icing sugar, sifted
Description
Indulge in the harmonious blend of aromatic Earl Grey tea, delicate poppy seeds and a hint of honey in this scrumptious loaf that will delight with every bite.
Method
Step 1 of 3
Preheat oven to 180°C/160°C fan-forced. Grease a 7x29cm (base) loaf pan with baking paper, allowing paper to overhang at two long opposite sides. Snip tea bags and empty tea into a heatproof jug. Add 1 cup boiling water. Stand for 15 minutes. Strain tea, pressing with the back of spoon, through a fine sieve into a jug. Place poppy seeds and milk in a small bowl. Stand for 15 minutes.

Place 150g butter in a microwave-safe bowl. Microwave on high for 10 seconds or until melted. Add tea liquid, poppy-seed mixture, cup honey, eggs, almond meal and flour and mix well. Pour mixture into pan. Bake for 45-50 minutes or until a skewer inserted at the centre comes out clean. Stand for 5 minutes. Turn out onto a wire rack to cool.
Step 3 of 3
Using an electric mixer, beat remaining butter in a bowl until pale. Gradually add icing sugar, beating until fluffy. Place cake upright on a plate. Top with butter cream. Serve drizzled with remaining honey.
