  • 180grams unsalted butter
  • 2 plums, chopped
  • 2/3 cup passionfruit
  • 2 peaches, chopped
  • 2 apicots, chopped
  • 2 nectarines, chopped
  • 1 orange, rind
  • 1 1/2 cup double cream
  • 5 eggs (save 2 egg yolks for later)
  • 1 cup caster sugar (save 0.25 cups of sugar for dusting fruit)
  • 1tablespoons lemon, juice
  • 50grams slivered almonds
  • 1 almond panettone

Method

Step 1 of 7

Preheat oven to 210°C.

Step 2 of 7

For passionfruit curd, stir the passionfruit pulp, lemon juice, butter and sugar in a saucepan over medium heat until sugar dissolves.

Whisk eggs and egg yolks in a bowl until combined. Gradually add in the passionfruit mixture, whisking continuously.

Step 4 of 7

Return mixture to saucepan and cook, stirring, over a low heat, for 6–7 minutes or until thickened and the mixture coats the back of a spoon. Set aside to cool.

Step 5 of 7

Halve the mixed fruit and remove stones. Cut fruit into wedges and place into a roasting pan with extra sugar, orange rind and juice. Toss to coat. Bake for 15 minutes or until softened and syrupy. Set aside to cool.

Step 6 of 7

Whip the cream until soft peaks form. Fold into passionfruit curd.

Step 7 of 7

Place 1/3 of the panettone in a 3L (12-cup) capacity glass serving bowl. Top with 1/3 curd and 1/3 of the baked fruit. Repeat layering.
