  • 20grams butter, softened
  • 750grams carrots
  • 2tablespoons golden syrup
  • 1teaspoons pepper (to season)
  • 1teaspoons salt (to season)
  • 1 1/2tablespoons walnuts, chopped

Method

Step 1 of 5

Preheat oven to 200°C.

Step 2 of 5

Place 1 tbs olive oil and golden syrup into a roasting pan. Season with salt and pepper.

Step 3 of 5

Place pan into oven for 3 minutes until syrup melts.

Step 4 of 5

Peel, trim and halve carrots lengthways. Add carrots to pan, turning to coat with syrup. Roast, turning occasionally, for 20 minutes.

Step 5 of 5

Meanwhile, combine stuffing mix, chopped walnuts and softened butter. Scatter over carrots, roast for a further 10 minutes until carrots are just tender. Serve.
