  • 1/2 cup plain flour
  • 1 1/3 cup fresh flat-leaf parsley leaves
  • 8 long bread rolls, split
  • 1teaspoons paprika
  • 5tablespoons lemon juice
  • 1/2 cup Greek-style yoghurt
  • 1/2 cup tahini
  • 2tablespoons sesame seeds
  • baby leaf salad mix (to serve)
  • 1/3 cup olive oil
  • 2 eggs
  • 2 cup panko breadcrumbs
  • 1 garlic clove, chopped
  • 8 plain chicken breast schnitzels

Method

Step 1 of 5

Place chicken between 2 sheets of plastic wrap. Using a meat mallet, pound until 5mm thick. Place flour on a plate. Whisk eggs and 2 tbs water in a shallow bowl. Combine breadcrumbs, seeds and paprika in a shallow dish.

Dip chicken in flour, egg and lastly breadcrumb mixture. Place on a tray. Continue with remaining chicken.

Heat half the oil in a large frying pan over medium-high heat. Cook chicken for 2-3 minutes on each side or until golden and crisp. Repeat with remaining oil and chicken.

Meanwhile, place garlic, parsley, tahini, yoghurt, 4 tbs of juice and 1/2 cup water in a food processor. Process until smooth and combined. Season with salt and pepper.

Step 5 of 5

Combine salad leaves and remaining juice in a bowl. Place roll bases on board. Top with lettuce mixture, then schnitzel (cutting to fit) and drizzle with tahini sauce. Sandwich with roll tops. Serve.
