  • 2 cloves garlic, crushed
  • 1 red onion, sliced
  • 1tablespoons baby capers
  • 2tablespoons balsamic vinegar
  • 1teaspoons dijon mustard
  • 60grams baby rocket
  • 100grams feta, diced
  • 600grams sirloin steaks
  • 1/3 cup olive oil
  • 250grams solanato tomatoes, halved
  • 1teaspoons honey
  • 1 cup French-style lentils, rinsed

Method

Step 1 of 3

Place lentils into a saucepan with 3 cups cold water. Bring lentils to the boil over high heat, reduce heat and simmer for 15-20 minutes until just tender. Drain.

Step 2 of 3

Meanwhile, heat 1 tbs of the oil in a frying pan over medium heat. Season steaks on both sides with salt and pepper. Add to pan and cook for 3 minutes each side for medium rare or until cooked to your liking. Transfer to a plate and rest for 5 minutes.

Step 3 of 3

Whisk remaining oil, vinegar, garlic, mustard and honey together in a jug. Set aside. Combine lentils, tomato, onion and half of the dressing in a serving bowl. Thinly slice steak and add to salad with rocket. Add feta and capers and serve with remaining dressing.
