  • 300grams green beans, steamed (to serve)
  • 2tablespoons flat leaf parsley, finely chopped

  • 600grams potatoes, steamed, coarsely mashed (to serve)
  • 1 bunch baby carrots, steamed (to serve)
  • 2teaspoons lemon, zest finely grated
  • 1/3 cup parmesan cheese, grated
  • 1 1/2 cup almond meal
  • 2tablespoons olive oil
  • 500grams chicken tenderloins
  • 2 egg whites, lightly beaten

Method

Step 1 of 3

Place cornflour in a shallow bowl, season with pepper, place egg whites in a second shallow bowl and whisk until frothy. Mix almond meal, lemon zest, parmesan and parsley in a third shallow bowl. Dip a piece of chicken in the flour to coat, then in the egg whites and lastly the almond mixture. Repeat with remaining chicken tenderloins.

Step 2 of 3

Heat olive oil in a large non-stick frying pan over medium-high heat. Cook schnitzels, in batches, for 3-5 minutes each side or until golden brown, adding a little extra oil if required. Transfer chicken to a tray lined with absorbent paper to drain.

Step 3 of 3

Serve with steamed green beans, baby carrots and smashed potatoes.
