- 1 clove garlic, crushed
- 2teaspoons hot English mustard
- 1teaspoons ground black pepper
- 2teaspoons dried oregano
- 1tablespoons olive oil
- 2kilograms beef rib roast
- 2teaspoons dried parsley
- 2teaspoons sea salt

Preheat oven to 220°C.
Step 2 of 3
Combine all ingredients for herb mixture in a bowl then rub into meat (see tip 2) and place on a rack in roasting pan. Cook for 20 minutes. Reduce oven temperature to 200°C and continue to cook for a further 60-85 minutes for rare or until cooked to your liking (see cooking times for rare, medium and well done).

Remove meat from the oven and cover loosely with foil. Rest for at least 20 minutes before carving (see tip 1). Tip 1: Carving
