Classic BLT - Bacon, Lettuce & Tomato Sandwich

- 2-3 ripe tomatoes, sliced
- 8 slice vienna bread (or your own favourite)
- 1 handful cos lettuce, shredded
- 6 rasher bacon
- 4tablespoons mayonnaise
Method
Step 1 of 3
Trim rind from bacon rashers and discard. Cut each rasher in half. Fry in a pan over medium heat until crisp. Remove from pan, drain on paper towel and cover to keep warm.
Step 2 of 3
Toast bread until golden on both sides. Top with shredded lettuce and tomato and season with freshly ground pepper.
Step 3 of 3
Arrange bacon slices over tomato and top with a dollop of mayonnaise. Top with a second slice of toast and serve.
