- 1 carrot, peeled and grated
- 1tablespoons sunflower oil
- 2 sticks celery, finely sliced
- 1.50L vegetable stock, made with 2 stock cubes
- 1/2teaspoons salt
- 1 pinch cracked black pepper
- 1 bay leaf

Description
This thick and filling split pea soup is perfect vegetarian comfort food.
Method
Step 1 of 2
Heat the oil in a large, deep pot and cook the onions, celery and carrot for 5 minutes. Add the bay leaf and pour over the stock.
Step 2 of 2
Tip in the split peas and season well. Bring to the boil, reduce the heat to low and simmer for 1 hour, stir in the potatoes and cook for 20 minutes more, until the split peas and potatoes are tender. Remove the bay leaf and serve.
