Method
Step 1 of 2
Heat the oil in a deep-sided frying pan, add the onion, and cook over a medium heat for 3 minutes. Add the zucchini and cook for a further 5 minutes, stirring constantly.
Step 2 of 2
Add the garlic and beans, cook for 1 minute, then add the tomatoes, paprika, and oregano. Cook for 10 minutes, stirring occasionally, then season with salt and black pepper. Drizzle with chilli oil (if using), and serve with some fresh crusty bread.
