  • 2tablespoons olive oil
  • 800grams mixed beans, drained
  • 1 large onion, peeled and finely sliced
  • 2 large red capsicum, cored and chopped
  • 2 cloves garlic, peeled and minced
  • 1 large eggplant, diced
  • 3tablespoons harissa paste
  • 800grams chopped tomatoes
  • 60grams dried apricots, chopped
  • 1tablespoons honey
  • 3tablespoons coriander, fresh, chopped

Description

Fiery harissa gives this bean stew a real kick and lots of middle eastern flavour.

Method

Step 1 of 3

Heat the oil in a large pan on medium heat. Cook the onions for 5 minutes, add the sliced capsicums and eggplant and cook for 6-8 minutes.

Step 2 of 3

Add the beans, stir in the garlic and harissa and cook for 2 minutes.

Step 3 of 3

Pour over the chopped tomatoes and a can of water and stir in the apricots and honey. Simmer for 15-20 minutes until the vegetables and beans are tender and the sauce has reduced. Serve with fresh coriander on top.
