Toasted Muesli With Coconut Chips

- 350grams rolled oats
- 75grams coconut chips
- 75grams sunflower seeds
- 200grams pumpkin seeds
- 150grams flaked almonds
- 100grams hazelnuts
- 4tablespoons maple syrup
- 2tablespoons sunflower oil
- 250grams sultanas
- 75grams dried figs, roughly chopped
- 2 cups soya milk (to serve)
- 1 punnet raspberries (to serve)
Method
Step 1 of 4
Mix together the oats, coconut chips, sunflower and pumpkin seeds, flaked almonds and hazelnuts in a large bowl.
Step 2 of 4
Transfer half the muesli mixture to a separate bowl. Mix the maple syrup and oil together in a jug, then pour over the remaining half of the muesli and toss really well to lightly coat all the ingredients.
Step 3 of 4
Line a large roasting tin with baking parchment, scatter over the syrup-coated muesli and spread out in a single layer. Bake in a preheated oven, 150°C for 15-20 minutes, stirring occasionally, until golden and crisp.
Step 4 of 4
Leave to cool completely, then toss with the uncooked muesli and the dried fruit. Store in airtight storage jars. Serve with soya milk and raspberries.
