Method
Step 1 of 3
Place hommus in a small serving bowl and drizzle with half the oil. Place olives in another small bowl and drizzle with remaining oil. Scatter olives with 2 thyme sprigs and season with pepper.
Step 2 of 3
Place semi dried tomatoes & fetta in a small bowl. Place blue cheese on a plate. Scatter with pomegranate seeds and a few chopped pecans. Place pesto dip in a small bowl and top with basil sprigs. Place beetroot relish in a small bowl.
Step 3 of 3
Place brie on a large serving board and drizzle with honey. Top with rosemary. Place hommus, cheddars, red Leicester and salami on board, then arrange radish, fresh cucumbers, grapes, pickled cucumbers, figs, strawberries, nectarine, cherries, blueberries, apricots, pistachios and remaining thyme on board. Place grissini, crispbreads, crackers and bread on board and serve.
