  • 2 medium green chillies, de-seeded and chopped
  • 1 small red chilli, de-seeded and chopped
  • 50grams broccolini
  • 50grams bean sprouts
  • 2 medium shallots, sliced
  • 2 stalks lemongrass, outer layer removed. body sliced.
  • 3tablespoons ginger, chopped
  • 1teaspoons kaffir lime leaves
  • 4 cloves garlic, peeled and chopped
  • 25grams coriander, chopped
  • 25grams basil, chopped
  • 1teaspoons fish sauce
  • 1/2teaspoons sugar
  • 1tablespoons lime juice
  • 2tablespoons sesame oil
  • 3 1/4 cup coconut milk

Description

This aromatic and spicy Thai green curry is a tasty and exciting dinner option.

Method

Step 1 of 2

In a pot on a medium heat, fry the veg and herbs in the sesame oil for 2 minutes. Now add the rest of the ingredients apart from the coconut milk and fry for another 2 minutes while mixing.

Step 2 of 2

Now add the coconut milk and using a hand blender, blitz until smooth. Allow this all to simmer now until the sauce reduces to at least 1 third the size. Remove from the heat and store.
