  • 1/2 red capsicum, chopped
  • 4 spring onions, chopped
  • 375grams portobello mushrooms
  • 4 rasher shortcut bacon, chopped
  • 1 egg, lightly beaten
  • 1 1/4 cup tasty cheese, grated
  • 1/3 cup breadcrumbs

Method

Step 1 of 3

Preheat oven to 180°C.

Step 2 of 3

Remove stalks from mushrooms, chop and set aside. Place mushroom cups into a lightly greased baking dish. Cook bacon, mushroom stalks, spring onions and capsicum in frying pan for 5 minutes over medium heat. Season with salt and pepper to taste. Transfer to a bowl and cool.

Step 3 of 3

Add egg and 1 cup of the cheese to cooled mixture. Spoon into mushroom cups. Combine remaining cheese and breadcrumbs and sprinkle over filling. Bake for 30 minutes or until golden brown.
