  • 2 oranges, peeled, thinly sliced into rounds
  • 1/2 small red onion, thinly Sliced

Description

This spiced barbecued lamb cutlets with orange salad recipe fuses juicy aromatic spiced meat with a zesty fresh salad perfect for a light dinner or lunch.

Method

Step 1 of 2

Heat a barbecue or chargrill pan over high heat. Combine spice blend and 1 tbs oil in a large shallow plate. Add lamb and turn lamb to coat. Cook lamb, in batches, for 3 minutes on each side for medium or until browned and cooked to your liking.

Step 2 of 2

Meanwhile, combine vinegar, chilli and remaining oil in a large bowl. Season with pepper. Add spinach, orange and onion, then toss to combine. Serve lamb with orange salad.
