  • 1 avocado, diced
  • 2tablespoons coriander leaves
  • 1 brown onion, finely chopped
  • 2 tomatoes, diced
  • 4 cup salt-reduced vegetable stock
  • 1 lime juiced
  • 1 1/2 cup frozen corn kernels
  • 1tablespoons chipotle sauce
  • 2 black beans, rinsed and drained
  • 1tablespoons olive oil
  • 175grams lightly salted tortilla chips (to serve)
  • 2 cloves garlic, crushed

Method

Step 1 of 2

Heat oil in a large, deep saucepan over medium heat. Add onion and garlic and cook for 4 minutes or until tender. Add corn, beans, sauce, stock and 2 cups water. Bring mixture to the boil. Reduce heat to low and simmer for 5 minutes.

Step 2 of 2

Meanwhile, combine tomato, avocado and lime juice in a bowl. Ladle soup into bowls. Top with salsa and coriander leaves. Serve with tortilla chips.
