  • 1packets 500g Birds Eye Veggie Rice Cauliflower
  • 1tablespoons vegetable oil
  • 1 clove garlic, crushed
  • 2centimeters ginger, finely grated
  • 1 long red chilli, finely chopped
  • 1 bunch baby pak choy, halved lengthways
  • 80grams snow peas, thinly sliced lengthways
  • 1 small lebanese cucumber, cut into matchsticks
  • 2 spring onions, thinly sliced diagonally
  • 2tablespoons unsalted peanuts, roughly chopped
  • 2tablespoons sweet chilli sauce

Method

Step 1 of 3

Heal oil in a large frying pan over medium-high heat. Cook cauliflower, stirring occasionally, for 3 minutes or until softened. Add garlic, ginger and half of the chilli. Cook, stirring occasionally, for4 minutes or unitl cauliflower is just starting to brown.

Step 2 of 3

Bring a medium saucepan of water to the boil. Add pak choy and snow peas. Cook for 1 minute or unitl bright green and tender. Drain.

Step 3 of 3

Divided cauliflower rice mixture among bowls. Top with pak choy mixture and cucumber. Sprinkle with onion, peanuts and remaing chilli. Serve with sweet chilli sauce.
