  • 1tablespoons flat-leaf parsley leaves, chopped
  • 1 lemon
  • 8 slice sourdough bread, toasted
  • 2tablespoons fresh dill, 1 tbs chopped (1 tbs to serve)
  • 1/2 cup Greek style yoghurt

Description

Bring the cafe to you with this smoked salmon and avocado toast recipe; perfect for breakfast, lunch or in between. Best of all, it's ready in 15 minutes.

Method

Step 1 of 3

Combine Greek-style yoghurt, horseradish, dill, parsley and 1 tsp of finely grated lemon rind. Season to taste with salt and pepper. Set aside.

Step 2 of 3

Peel and deseed the avocado. Scoop the flesh into a bowl. Add juice from half the lemon. Use a fork to roughly mash. Season to taste with salt and pepper. Cut remaining lemon half into wedges.

Step 3 of 3

Generously spread smashed avocado on toasted sourdough, then spoon over the yoghurt mixture and top with the salmon. Garnish with extra dill sprigs and serve immediately with lemon wedges.
